Dark Chocolate Low Carb Granola Clusters 

We’ve taken two great things, sugar-free chocolate & granola Ingredients, combined them together for a chewy cluster packed with healthy fats. 
Chocolate granola clusters are excellent for dessert and sure to satisfy the chocolate monster inside. However, they are healthy enough to eat as an afternoon snack.
This recipe is extremely versatile. Mix and match the nuts & seeds. Simply equal the same quantities in total. Use your favorites to personal these just the way you like them!
Dark Chocolate Low Carb Granola Clusters
Ingredients:
1 (4 oz) 100% Unsweetened Chocolate Bar
1/2 C. Cocoa Butter (measured loosely broken in sm. chunks)
2 TB.  Butter
2 TB almond Butter
4 TB powdered erythritol 
1/4 ts salt
1/2 TB. coconut flour
1 ts. Vanilla extract 
1 C. Lg. Coconut flakes unsweetened 
1 C. Raw almonds *whole
1 C. Raw pecans *whole
2 TB. Pumpkin Seeds
2 TB. Hemp Seeds 
Directions:
  1.  Prepare a cookie sheet lined with parchment paper
  2. Lightly roast raw nuts and coconut chunks. *optional, roast seeds. 
  3. In small saucepan melt first 6 ingredients.
  4. After chocolate mix is melted, add coconut flour, extract, and vanilla stevia. Stir to blend.
  5. Place all nuts and seeds into a bowl then pour chocolate in and stir.
  6. Drop spoonfuls of mixture onto the prepared parchment to paper. Use hands to press lightly together if needed. These will set up and harden nicely in the freezer. 
  7. Freeze for 15 minutes or until hardened. Wrap in a ziplock bag and store in refrigerator or freezer. 

 

*Option to step #6 - Spread entire batch into parchment paper and freeze. Cut into squares. Gives a whole different look.
